The last of the Blackberries!

One of the best parts about Summer is the fruit growing on the trees. Forraging berries and fruit always makes me feel so at one with the world, it takes us as human beings right back to our roots.

Yesterday I went for a forraging walk with my Mum to an untouched bit of land and we picked the last of the Blackberries before the rainstorm that's heading our way this week. I say 'the last of them' but there was thousands unpicked, we were spoilt for choice! We collected Slow Berries, Apples, and Blackberries.

I was so excited to get home and make some Jam and Cordeal. We had so many leftover that I'll be making an Apple and Blackberry Crumble too! The diet is not going well..!

So I thought I'd share my Blackberry Cordeal recipe with you. It's super easy and you can use as many blackberries as you want, just make sure to get your ratios right.

RECIPE:

600g Blackberries

250g Caster Sugar

Juice of 1 whole Lemon

 

METHOD:

Put all of the ingredients in a large pan and bring to the boil for about 10 minutes. Cover the pan and leave it to cool overnight. Once it's ready the next day, squeeze all of the contents through a muslin (don't be worried when your hands start to look like you've just been in a massacre. Side note: You may want to close your curtains for this part as your neighbours may start to wonder what on EARTH is going on if they catch a glimpse..!)

Put your Cordeal in bottles and enjoy with water and a bit of ice! YUM!
